Chicken I often cook up a bunch of chicken breasts in the crock pot - I also put in a bit of water to make more broth, seasoning salt and pepper. I will have shredded chicken sandwiches for dinner on that first night and then I will divide the chicken up and freeze it for future meals. Cut up chicken is good for Krawdad Chicken, Chicken and Noodles (over mashed potatoes) and White Chicken Chili. Shredded chicken is good for Cheesy Chicken Enchiladas, Lemon Chicken and Rice, and Chicken Salad. You can make Chicken Noodle Soup from either kind.
Beef Like with chicken I also will cook a pot roast in the crock pot and will cook extra beef. We'll have pot roast the first night complete with potatoes and carrots and onions all cooked in the crock pot and then I will divide and freeze the remaining beef and broth. Some will be made into vegetable beef soup, some will make shredded beef or barbecue beef sandwiches, and some will be used for beef and noodles. I find it just helps to have the pre-cooked meat on nights when we are rushed.
Hamburger For both my chili and my Marzetti, I will often cook batches of hamburger with onions and garlic and freeze in 1 lb. bags. This helps to speed up the process on nights when we don’t have a lot of time. I never defrost my hamburger. It thaws really quickly on its own when cooking with the other ingredients. |
