1 pkg frozen puff pastry sheets (2 sheets)
3 eggs
1 tsp. water.
1/2 c. crumbled feta cheese
10 oz. pkg frozen chopped spinach, thawed and well drained
1 medium onion, finely chopped
2 tsp. chopped fresh parsley

Directions:
Directions:
Thaw pastry sheets at room temperature for 30 minutes.
Preheat oven to 400º. Mix 1 egg and water set aside. Mix remaining eggs, cheese, spinach, onion, and parsley and set aside.

Unfold pastry on lightly floured surface. Roll each sheet into a 12in. square and cut each into 16- 3 in. squares. Place 1 T. spinach mixture in center of each square. Brush edges of squares with egg mixture. Fold squares to form triangles and press edges to seal. Place 2 in. apart on a baking sheet. Brush with egg mixture to glaze. Bake for 20 minutes or until golden brown. Serve warm or at room temperature.
