2 2/3 cups skim milk
5 eggs
2 teaspoons sugar substitute
1/4 teaspoon salt
1 teaspoon vanilla
dash nutmeg
3/4 cup toasted coconut, fresh or unsweetened

Directions:
Directions:
scald milk
combine eggs, sugar substitute, salt and vanilla in large mixing bowl and beat slightly
pour into well greased 8inch pie plate
sprinkle with nutmeg
bake at 450 for 5 minutes
reduce to 350 and bake 15 more minutes or until a knife inserted neat the center comes out clean
cool and garnish edge with toasted coconut
