1 gallon homogenized milk
3 junket tablets dissolved in 1 Tbs. or more warm water
Cheesecloth

1. Heat milk to lukewarm. Remove from heat. Add dissolved junket tablets. Stir well and cover.
2. Let set for 20 minutes. Remove cover. Stir well again. Cover and let set for 1 hour.
3. Then put cloth in strainer. Put pan underneath to save about 2 cups liquid. Pour cheese in cloth in strainer. Then gather up 4 corners of cloth. Twist around to drain water out.
4. While in strainer hold 1 corner up at a time-use rubber spatula to scrape cheese away from cloth. Do all 4 corners.
5. Then lift some corners of cloth to cover cheese while in strainer. Put flat plate on top. Then heavy pans or bowls. Let sit for 15 minutes.
6. Then open cloth. Flip cheese over cover with cloth. Put heavy pan or bowls on top of plate. Let set 5 or 10 minutes more.
7. Cheese is done. Take cheese and set on counter. I usually cut in 6 pieces. Then I lay them flat in glass casserole with lid. Sprinkle them with about 1 tsp. of salt or more. Cover.
8. After about 6 hours put reserved liquid on cheese. Serve whenever. Good luck and God bless you.
