Filleted fish
canning salt
white vinegar
several onions
1 qt. sugar
pickling spice

canning jars and lids

Directions:
Directions:
Fillet fish and cut into desired sized pieces. Pack in quart jars.
Add 2/3 cup of canning salt in each qt. jar. Cover with white vinegar. Let fish stand 5 days in this solution. Shake once a dat (at least).

Drain, wash; and rince at least 4 to 5 times. Let stand in fresh cold water for 1 hour. Pat fish somewhat dry with paper towels. Pack fish into jars with generous amount of sliced onions. Layer: fish & onions.

2 qts. white vinegar & 1 quart sugar. (bring them to a boil)
Add to each jar: 2 Tbsp. pickling spice. Let solution cool; then pour over fish in jars, and put lids on. Keep in refrigerator until all gone.
