6-8 chicken breasts
2 cans of healthy choice cream of chicken
2 tbsp. (heaping) sour cream
2 sleeves of Ritz crackers
2 tbsp. poppy seeds
1 stick butter

Directions:
Directions:
Cook chicken until tender (boil for about 20 min.) and cut into bite sized chunks. Combine chicken, cream of chicken, and sour cream and pour into a 9x13 casserole dish. In Ziplock bag crush (I use a rolling pin) crackers and poppy seeds together. Melt butter in sauce pan and add cracker/seed mix. Toss until thoroughly mixed. Spread over chicken mixture. Bake uncovered at 350º for 30 minutes.
