Fried Pork Chops or City Chicken Recipe

2 C flour
1/2 tsp salt
1/4 tsp black pepper
1 tsp marjoram
1/4 tsp onion salt
1/2 tsp Italian seasoning
1 egg
1 T water
2 C bread crumbs, seasoned or add your own

Fried Pork Chops:
3/4" thick Pork chops, 1/person

City Chicken
1 lb veal, cubed into 1-1 1/2 inch pieces
bamboo skewers, soaked in water

Directions:
Prepare meat:
Rinse and pat dry pork chops.
or,
Place cubed veal onto skewers, 4-6 pieces each.

Mix seasoning and flour in a large bowl or pie tin.
Flour meat and place on wax paper.

Beat egg and water (may need more).
Dredge (dip both sides) of chop or skewered meat and immediately coat in bread crumbs on all sides.
Place on wax paper until ready to brown.

Heat oil in a large skillet under medium high heat until hot.
Brown meat on both sides (all four sides for City Chicken), remove when nicely browned until all pieces are done.

Turn heat down to low, add 1/2" water to skillet.
Place rack in bottom of skillet if you have one.
Place meat into skillet, cover and steam until done, approximately 45 min. - 1 hr.

You may need to add extra water. Cooking time will vary with the amount of meat and the heat. Make sure it is done!
