1 cup sugar
1/2 cup oil
1 tsp vanilla
2 eggs
1 (21 oz) can apple pie filling
1/2 cup chopped walnuts
1/2 cup raisins (optional)
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Topping:
3 T granulated sugar
1/2 cup brown sugar
1/4 cup butter
3 T flour

Directions:
Directions:
In a bowl, combine sugar, oil, vanilla and eggs, then mix in apple pie filling, walnuts and raisins (if desired). In another bowl, combine flour, baking powder, baking soda, cinnamon and salt, then mix into apple mixture. Fill greased muffin tins one-half full.

To make topping, combine sugars, butter and flour. Sprinkle over batter in tins. Bake at 350 degrees for 15-20 minutes.

Makes 18-24 muffins.

I roughly chop the apples in the pie filling so the batter won't be quite so chunky. This makes enough for a crowd. It was always popular at the neighborhood Easter Egg Hunt/Brunch.
