6 Ears of corn, cooked, cooled
1 Large onion, diced
6 Strips of bacon, raw, cut into 1/4" wide pieces
Salt, to taste (1/4 tsp)
Pepper, to taste (1/4 tsp)

Directions:
Directions:
Chill left over cooked ears of corn in plastic bags overnight.
Cut off the kernels with a sharp knife.

Over medium heat, cook the bacon until there is a bit of grease in the pan.
Add onions and corn, cook until corn is crisp and browned, stirring frequently.
Salt and pepper to taste.

Serve hot!

For those who prefer to avoid bacon grease, the bacon can be browned and drained first and then the ingredients cooked in vegetable oil.
