1 lb lean ground beef
1 finely chopped onion
2 minces cloves of garlic
1 can (14.5 oz) diced fire-roasted tomatoes (or regular diced tomatoes)
1 tsp. dried oregano
6 cups beef broth
3 carrots, peeled and cut into 1/2 inch rounds
3 celery ribs, sliced
1/2 cup pearl barley

In large saucepan, cook the ground beef over medium-high heat. Break up the beef with a wooden spoon as it starts to brown. Add onion and garlic. Lower heat to medium. Stir occasionally until the meat is brown. About 12 to 15 minutes.
Add the tomatoes and oregano. Bring to a simmer over high heat. Stir in the broth, celery, carrots, and barley and bring this to a simmer. Reduce heat and cook until barley is very tender, approx 1 hour.
