2 pounds Granny Smith apple, peeled, cored and chopped wedges
2 pounds Braeburn Apples, peeled, cored and chopped into wedges
1 tsp. cinnamon
3/4 c. granulated sugar
1/2 c. butter
1 c. firmly packed light brown sugar
1 package refrigerated pie crust
1 egg white
2 tbsp. granulated sugar

Directions:
Preheat oven to 350º. Toss cut apples with cinnamon and 3/4 granulated sugar. Melt butter in 10 inch cast iron skillet over medium heat. Add brown sugar and cook, stirring constantly 1-2 minutes or until sugar in dissolved. Remove from heat and place one pie crust in skillet over brown sugar mixture. Spoon apple mixture over pie crust and top with remaining pie crust. Whisk egg white until foamy. Brush top off pie crust with egg white and sprinkle with 2 tbsp. of granulated sugar. Cut 4-5 slits in top for steam to escape.

Bake at 350º for one hour to one hour ten minutes or until golden brown and bubbly, shielding with aluminum foil during last 10 minutes to prevent excessive browning if necessary.

Cool on wire rack 30 minutes before serving.
