2 eggs, separated
1 cup sugar
1/2 cup shortening
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1 tsp. vanilla
1 1/2 cups fresh blueberries, tossed with flour to coat
Added sugar for garnish

Preheat oven to 350 degrees. Beat egg whites until stiff; set aside. Cream together sugar and shortening. Beat egg yoks well and add to sugar-shortening mixture. Sift flour, baking powder and salt together 3 times. To creamed mixture, add flour mixture alternately with milk. Fold in egg whites and vanilla. Add blueberries. Pour into greased and floured 9-inch square pan. Sprinkle lightly with sugar before baking. Bake 35 to 40 mins, or until toopick inserted in middle comes out clean. Cake will be lightly bronw on top; don't overbake.
