2 pk SureJell
3 T. lemon juice
7 ¼ C. sugar
5 cups juice (from 6 quarts of fruit)

Prickly Pear Juice:
Take 6 quarts of fruit, washed and halved, to put in a pot with 3 cups of water. Bring to a boil, and simmer. Squash off and on for 15 minutes. Strain in colander lined with cheese cloth.

Jelly:
Bring juice, lemon juice and sure jell to a boil. Boil full heat 30 seconds, then add sugar. Bring to a boil and boil for 4 ½ min. Let sit off heat for 3 minutes. Skim off foam with metal spoon. Pour into canning jars and seal. Water bath 5 min.

Everyone raves about this jelly! Mom has often given me jars of this to share with out-of-towners as gifts and I am always so proud to present it. I remember some asking me if I would be bringing some with me on my next visit! ~jess

This recipe is so unique. It has a wonderful taste, and the color is incredible! The novelty of it makes you curious, but Mom's craftmanship makes it an instant favorite.
