Grab whatever bread you have around (sourdough is the best), make a hole in the middle with a child's plastic cup or a small mouthed wine glass (aka two glasses all mothers should have) and make a hole in the bread.

Melt too much butter in a pan, add the bread, let it toast for a minute, then crack an egg into the hole, cover for a minute, then lift it out of the pan add MORE butter before flipping it over and cooking it for another minute or two.

Salt and pepper as you go to your own taste. When the toasty edges are brown remove immediately so the egg yolk doesn't over cook and serve immediately.

Don't forget to throw the extra piece of circle bread in the pan as you go, and include in in your salt and peppering! I remember my dad making this when we were growing up, and it's still a fave around here.
