2 c. small shell pasta
1 qt. boiling water
1 lb. pkg. hot Jimmy Dean Sausage
2 T. vegetable oil
2 stalks celery, diced
2 lg. yellow onions, diced
2 cloves garlic, minced
1 qt. water
1 c. beef broth
1 can (28 oz.) crushed tomatoes
2 8 oz. cans tomato sauce
1 tsp. dried basil leaves
1 can (15 oz.) garbanzo beans
1 can (15 oz) kernal corn
Salt and Pepper to taste

Cook pasta in 2 qts. boiling water until done, but not too soft. Drain. Brown sausage and drain the oil. Heat vegetable oil. Saute the diced celery, diced onions and minced garlic until transparent. In a large pot add the 1 qt. water, cooked sausage, sauteed celery, onions & garlic, beef broth, crushed tomatoes, tomato sauce and spices. Simmer for 6 hours.

After simmering, add the beans, corn and pasta. Simmer for 15 minutes more. Add salt and pepper to taste.

This is my favourite soup! This is from my good friend Iris who lived to be 103 years old. I make this often, and in fact I'm making it right now, as this recipe is being typed, for the DUP meeting tomorrow!
