2 lbs. stew meet, cubed (we use sirloin steak)
2 c. celery, sliced
1 16 oz bag of baby carrots
2 lb. red (small) potatoes, washed and halved
4 med. onions, quartered
1 8 oz. pkg fresh mushroom (washed)
1/2 c. spicy or regular V-8 juice
2 Tblsp. tapioca
2 14 oz. cans stewed or diced tomatoes
salt and pepper to taste

Directions:
Layer (meat on bottom) first 6 ingredients in large crock pot or roaster (for easy cleaning, pam it first). Mix tapioca with V-8 juice. Add to tomatoes and stir. Pour tomato / tapioca mixture over meat and vegetables.

Cover and Cook:
Crock pot on low for 8 to 10 hours
Roaster at 250º for 5 to 6 hours

Serve with warm crusty bread.

This is Grandma Thelma's recipe and a dish I grew up having. When we moved to Minnesota and celebrated Christmas Eve with Auntie Barb, she always served this.
