4 Fresh Salmon filets
1 C. shredded daikon root
1 C. prepared horseradish
1/2 C. panko bread crumbs
1/2 C. mayonnaise
2 T. chopped parsley
salt and pepper to taste
For marmalade:
6 red onions, julienned
1 C. sugar
1 C. red wine vinegar
1 C. light corn syrup
salt and black pepper

For crust, combine daikon root, horseradish and mayonnaise and mix into a paste. Add in panko to help bind together; season with salt, pepper, parsley and refrigerate for 15 minutes
Generously rub salmon with crust; heat skillet to medium high. Sear with crust side down, until crust is firm and golden brown. Continue cooking until done. For marmalade, add all ingredients into a cold pot and bring to a simmer, Once simmering, reduce by two-thirds. Spoon over salmon and serve.
