1 1/2 lbs. large sea scallops
1/4 t. kosher salt
1/4 t. crushed red pepper flakes
1 T. olive oil
1/2 C. butter
1/3 C finely chopped pistachios
2 T. finely chopped parsley

Directions:
Directions:
Coat grill rack with nonstick cooking spray. Preheat grill to medium high
Pat scallops dry with paper towels. Sprinkle with salt and red pepper flakes or Cajon seasoning; drizzle with oil
Place scallops on grill for 3 minutes per side
Meanwhile, in a small saucepan melt butter over low heat. Remove from heat and stir in pistachios and parsley, Remove scallops from grill and drizzle the pistachio butter. Serve immediately over a bed of sautéed spinach.
