4 C. milk
4 eggs, separated
3 T. flour
3/4 C. sugar
cinnamon

Directions:
Directions:
Heat Milk. Beat egg whites until stiff and pour onto hot milk. DO NOT MIX IN. Cook them on top until they are firm. Skim off, and put in a bowl. Mix flour, sugar and egg yokes together. Add a small amount of hot milk, then pour remaining milk in. Cook, stirring constantly, until it thickens. Pour over egg whites. Sprinkle with cinnamon. Serve warm.

This is one of Mom's favorites. I think it reminds her of growing up in New Mexico. She gets a certain twinkle in her eye when she makes this.
