8-oz smoked salmon
1 TBS extra-virgin olive oil
1 TBS small capers, drained
1 TBS fresh squeezed lemon juice
3 TBS minced, fresh chives, divided
1 TBS minced, fresh basil, divided
salt and pepper to taste
lime wedges

plus (one below or an assortment):
2 dozen toast points
pumpernickel rounds
crostini
toasted baguette

Directions:

Slice salmon and dice into approximately 1/4” pieces. In a medium bowl, mix salmon, olive oil, capers, and lemon juice.* Add 1/2 chives and 1/2 basil; season with salt and pepper. Mound in attractive bowl; sprinkle with remaining chives and basil. Garnish with lime wedges.

You can make this the day before up to this point, cover tightly with plastic wrap and refrigerate. If you have any leftover the next morning, great with toasted bagels and cream cheese!
