3 cups buttermilk baking mix
3/4 cup white sugar
2 1/2 teaspoons baking powder
1/2 to 3/4 cup yellow cornmeal (depending on whether you add all butter or substitute)
4 eggs
1 1/4 cups milk
1 cup butter, melted

1. Preheat oven to 350 degrees F (175 degrees C). Add 1 stick of butter to a 9x13 inch baking pan. Place in oven, and allow it to melt completely.
2. In a large mixing bowl, combine baking mix, sugar, baking powder and cornmeal.
3. In a separate bowl, combine eggs, milk and remaining melted butter; beat until creamy. Stir in flour mixture until well combined. Pour batter into prepared pan.
4. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center of the bread comes out clean. Serve warm.

This recipe has a lot of butter. Frequently, I substitute 1/2 C. sour cream or 1/2 C. applesauce for one of the sticks of butter. Do not cut out the butter in the pan. Grandmother taught me that trick. It gives it an amazing crust. Also, I add veggies to this...broccoli, corn or sautéed bell peppers and onions, depending on what I am serving it with. This cornbread goes very well with bean soups or hearty stews.
