1c. Vegetable Oil
1c. Sugar
1tsp. of Baking Powder
2c. Self Rising Flour
1tsp. of Vanilla
3 egg Yolks
1c. Buttermilk with 1/2 tsp. of baking soda added to the cup
ICING:
3 Egg Whites (Beaten until stiff)
6T. Water
1/2c. Sugar
1/4tsp. Cream of Tartar
1tsp vanilla

CAKE:
Mix all ingredients well. Place in a 9x12 greased pan or 2 round greased pans. Preheat oven to 350. Bake for 45 to 50 min until sticking a toothpick in and it comes out clean. Cool completely before icing. Ice and then sprinkle with coconut.

ICING:
Combine sugar, water, and cream of tartar in a small saucepan. Cook the syrup mixture to 238F (on a candy thermometer) to soft ball stage. Pour 1/3 of syrup in a fine stream into the already stiffly beaten egg whites while beating constantly on high speed. Cook the remaining syrup to 268F ( hard ball stage). Remove from heat and pour the last of the syrup into the icing beating thoroughly. Add the vanilla and continue to beat until thick enough to spread.บบ

This was Papa Earl's favorite birthday cake. When Papa Earl came to Florida to live with us, as his birthday approached I contacted family members to get the recipe. Terri Chastain sent me the recipe she had gotten from her Mother ( Mrs. Gracie Wilson). It seems as they aged, Mrs. Wilson, who was neighbors with them made the cake for Papa Earl! Papa Earl loved it and it was fun to make for him.
