1 (7oz) pouch tuna, drained well
2 green onions, chopped fine
2 tsp. Dijon mustard
2 large eggs, beaten
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/2 tsp. freshly squeezed lemon juice
3/4 cups panko bread crumbs, divided
Olive oil, for sautéing

Directions:
Directions:
Place first 7 ingredients and 1/4 cup of the bread crumbs into a mixing bowl and stir to combine. Divide the mixture into 8 rounded pattys and set aside. Allow them to rest for 15 minutes.

Place the remaining bread crumbs into a pie plate. Coat each patty on all sides with the bread crumbs. Heat enough olive oil to cover the bottom of a saute pan and heat over medium heat until shimmering. Add the patties and cook 2-3 minutes on each side or until golden brown.

Allow them to cool and drain for 2-3 minutes on a rack before serving.
