3 Tbsp Olive Oil
1 Cup finely chopped onions
1 Tbsp. finely chopped garlic
4 cups coarsely chopped (but not drained) tomatoes
1 six oz can tomato sauce
1 Tbsp. dried oregano
1 Tbsp. fresh basil or 1 tsp dried - finely cut
1 bay leaf
2 tsp. sugar
1 Tbsp salt
freshly ground pepper

Directions:
Directions:
Heat olive oil in saucepan and cook the onions until they are soft and transparent but not brown, about 7-8 minutes over medium heat. Add the garlic and cook for another minute stirring constantly.

Then stir in the tomatoes, tomato paste, oregano, basil, bay leaf, sugar, salt and pepper. Bring the sauce to a boil then turn the heat very low and simmer uncovered, stirring occasionally, for about an hour.

When finished, the sauce should be thick and fairly smooth. Remove the bay leaf. Taste and season with salt and freshly ground pepper.

This is a basic sauce and is very versatile. Fresh tomatoes or canned, both taste good! I try to use fresh herbs whenever possible and adjust the quantities accordingly. To cut back on salt try using anchovy paste, a 1/4 teaspoon or so.
