2 Tbsp butter
3 med Granny Smith Apples, peeled and chopped
1 med head red cabbage, sliced (about 8 cups)
2 small onions, chopped (3/4 c)
1 ½ c hot water
¾ c cider vinegar
2 tsp salt
2 Tbsp sugar (can use Splenda or omit)

Melt butter in Dutch oven on Med high heat. Cook apples 5 minutes. Stir in remaining ingredients. Simmer covered 40 minutes, stirring occasionally.

Lisa: one of Mom's favorites, this has a wonderful flavor and is a beautiful dish. I like to leave the apples unpeeled and slice thinly. I slice the onions into thin slivers as well. Used Honey. Once cooked, I removed the cabbage and cook the juices down until they thickened. Wonder if it might work well simmered uncovered, or use less water?
