Ingredients: 3 Tbsp. olive oil 1 cupped chopped fresh mushrooms (if you don't like mushroom's, you can substitute, 9 0z. frozen spinach thawed and the liquid squeezed out) 1/4 cup celery 1 garlic clove minced (I use more) 1 can (14 oz.) artichoke hearts drained and chopped (note do not use the pickled kind in oil0 1/2 cup chopped green onions 1/2 tsp. dried marjoram leaves 1/4 tsp. oregano leaves 1/4 tsp. cayenne 1 cup shredded cheddar cheese (about 4 oz.) 1 cup Monterey Jack cheese (about 4 0z.) 2 large eggs slightly beaten 1 prepared Pillsbury pie crust (or other brand)

Directions:Preheat oven to 350º.
Spray a 13 x 9 inch baking dish with cooking spray or lightly oil the baking pan.
For the filling heat oil in a medium skillet. Add mushrooms (if suing spinach add that at the end), celery, and garlic. Saute until celery is tender. REmove from heat. Stir in artichokes, green onion's and spices. Add eggs and cheeses. Set aside.
Place crust in sprayed pan. Push crust up the sides of the pan. Pour all ingredients into the pan and bake for approximately 30 minutes or until center is set.
Let cool for about 5 minutes before cutting. Serves about 24 pieces. |

Notes: I love this appetizer. It is easy to make and I always get asked for the recipe when I make this. If you have a deeper pan you can add a few more eggs to make the dish fuller. I have made both with the mushrooms and the spinach. Personally, I like the spinach one better.
