1 Cup HELLMANN'S Mayonnaise (Eversmanns only eat Hellmann's)
2 Tbsp vinegar
1 1/2 tsp salt
1 tsp sugar
1 Tbsp yellow mustard
1/4 tsp black pepper
4 cups peeled, cubed, and cooked potatoes (5-6 medium)
1/2 cup chopped celery (Optional, if I leave them out, I sprinkle in a few celery seeds.)
1/2 cup chopped purple onion
2 hard-cooked eggs, chopped

Directions:

Cooked potatoes until soft, but still firm. Combine first 6 ingredients. Stir in remaining ingredients. Sprinkle with paprika. Cover, chill. Makes 5 cups.

I've been making this for years and it's good every time. Tori actually added the yellow mustard when they were visiting one summer. Everyone liked it, so I added it to the recipe.
