Ingredients:  
1 lb. penne pasta generous pinch of nutmeg (optional)
¼ lb thinly sliced Prosciutto fresh ground pepper
½ c. unsalted butter 1 to 2 T ground parsley
1 large sweet onion, sliced about 5 fresh sage leaves, chopped
½ c. chicken stock 1 c grated Parmesan cheese
Grated zest of 1 lemon

Trim Prosciutto of excess fat and cut the slices into narrow strips. Boil large pot of water and cook pasta 10-12 minutes.
Meanwhile, melt butter in a large frying pan. Add onion slices and sauté until soft, about 4 minutes. Add the chicken stock and simmer for 1 minute.
Drain pasta and put in a large shallow bowl. Add the Prosciutto, lemon zest, nutmeg, pepper, parsley and sage. Pour on the stock mixture and toss well. Add 3 tablespoons cheese and toss again. Garnish with parsley. Serve immediately.
