2 chicken breasts, boneless skinless
4 tsp. cajun seasoning
4 T. butter
3 c. heavy cream
1/2 tsp. lemon pepper seasoning
1 tsp. salt
1 tsp. black pepper
1/4 tsp. garlic powder
8 oz. penne pasta, cooked and drained
2 Roma tomatoes, diced
1/2 c. parmesan cheese, shredded, to taste

Rinse chicken with water, do not dry. In a large resealable plastic bag, shake chicken and cajun seasoning until chicken is well coated. In a large skillet, sauté chicken in 2 T. butter, over medium heat, turning whenever necessary. While chicken is cooking, in a second skillet, combine cream, 2 T. butter and remaining seasonings over medium heat, stirring occasionally. When the cream mixture begins to bubble, add the pasta and turn off heat. Stir well. When chicken is cooked through, place on cutting board and slice into strips. Spoon pasta and sauce onto serving plates and top with chicken, diced tomatoes and Parmesan. Throw a thick slice of garlic toast on that bad boy and enjoy!
