3 ½ c brown sugar
8 ½ oz vegetable oil
4 Tbsp butter
3 eggs
1 tsp salt
¾ tsp cinnamon
1 ½ c pecans or toasted hazelnuts, chopped
½ tsp baking powder
½ tsp baking soda
5 c flour (4 ½ if using whole wheat in the recipe) (1/2 whole wheat, ½ white flour)

Cream sugar, oil, and butter. Add the rest of the ingredients in order given. Form into 3 rolls the length of a small cookie sheet. Wrap in plastic wrap, then foil. Either store in freezer for longer storage or refrigerate for 3 hours. Slice into ¼ inches slices (an electric knife works great.) Bake 10 – 12 minutes at 350 degrees. DO NOT OVERBAKE.

(A friend gave this to my mother back in 1984 but I was not sure where it came from originally… I just got an e-mail from Wolferman’s Gourmet Bakery but never made the correlation before!!)

We love this cookie as we can make them in advance and have fresh make cookies when unexpected company comes over. To make them extra special I like to throw in a cup of dried cherries or cranberries.
