(Empanada dough)
2 cups flour
1/2 cup corn starch
1/3 cup vegetable oil
1 cup of warm water
1 tsp salt
1/2 tsp sugar

(You can also use ready-made empanada dough discs)

(Meat Filling)
2 lb ground beef (or you can use a meat of your choice)
2 medium onions (finely chopped)
2 tsp salt or to taste
2 tsp all-spice
1/4 cup pine nuts, roasted (optional to use other nuts)
4 tsp butter
vegetable oil for frying

(Cheese Filling)
2 cup shredded cheddar cheese
2 cup mozzarella cheese
2 eggs beaten
1 tsp salt
1 tsp black pepper
2 tbsp chopped parsley

Directions:
To prepare the meat filling:
In a medium sauce pan, roast the nuts with butter until golden brown. Add the meat and brown it, add the onion and cook for 3-5 minutes. Add salt and all-spice, then stir and set aside to cool.

Cheese filling:
Combine all the ingredients and mix together.

To prepare the dough:
In a mixing bowl, mix the flour, cornstarch, and salt, then mix the dry ingredients together. Next add the oil and rub together. Then add the water and knead to combine, if needed more water add, or if to soft add more flour, cover and set aside for 1/2 an hour to rest.

To assemble empanadas: (sprinkle some flour before you roll the dough)
Use the rolling pin to roll out the dough into a standard thin pizza size and cut into small circles. (You can use a round cookie cutter.) Fill the middle of the dough with about 1 tsp of filling. Close it to look like a half moon and seal the edges with a fork. Place it on a wax paper tray. Keep in the fridge until ready to fry. Fry on medium heat until golden in color.
