10 Yams
2 Onions
Bag of baby carrots
2 green peppers
A box of mushrooms, about 2 cups.
Chopped up Bacon

Except for the bacon, the idea is to make a Dutch Oven dish that does not rely on the commonly used cheeses, cream, creamed soups or bread that are so common in Dutch Oven cooking.

The idea of the bacon is to grease the pan a little and add flavor. The amount you use is up to you, depending on your appetite for bacon. "Pre-cooked" bacon works. A 1/4 pound of fresh works if you drain off the grease.

Use a 12 inch Dutch Oven. Light 28 standard charcoal briquettes. Put 14 under the pot. Save the other 14 for the top.

Chop and fry the bacon, when done, set aside
While the bacon is cooking cut the yams and onions, mix with the carrots
Slice the mushrooms and chop the green peppers
When the bacon is out of the Oven, put mixed yams, onions and carrots in
Layer sliced mushrooms and chopped green peppers on the top
Spread the bacon pieces as the top layer
Salt and pepper to taste.

Put the lid on with the remaining 14 briquettes.

Cook for 45 minutes, more or less depending on how well done you like veggies.

The addition of cooked sausage or other lean meat makes it a "one pot meal"

Other vegetables like turnips or rutabagas can be included.

If you chop up too much stuff, save it for another meal and do a quick cook in the microwave.
