FOR TWO PEOPLE - 10 minutes prep - 5 minutes to cook - serve over rice:

One small chicken breast per person - cubed
Broccoli florets - Approx 12
One red pepper - chopped
10 Sugar Peas - chopped
1 tablespoon soy sauce
1 tablespoon sweet soy sauce
3 tablespoons honey
2 teaspoons minced garlic
Olive oil to cook
salt and pepper to taste

Before you begin cooking stir fry, have your rice cooked and dished out ready on your serving plates.

Assemble all ingredients for stir fry next to your wok - have all ingredients chopped and ready to go. Once you start cooking it will only take about 4 or 5 minutes to cook this dish and you want to serve it hot right onto the rice, ready to eat while still hot from wok.

Heat your wok to very hot. Add olive oil and add chicken to pan. Brown off lightly for a minute and add garlic. Stir around for about a minute. Add soy sauce and sweet soy sauce and coat chicken. Add vegetables and constantly stir for about two minutes. Add honey and stir with vegetables till it melts into sauce. Keep stiring vegetables for about a minute till they slightly wilt. In all, cooking the stir fry will take, tops, four or five minutes from the time you start.

Serve over rice. Quick, easy and healthy. Yum!
