6 egg yolks
6 T sugar
1 c evaporated milk
1 tsp almond flavoring
1 tsp vanilla
pinch of salt

Directions:
Whip egg yolks, 6 T. sugar, evaporated milk, almond flavoring, vanilla , and salt. In a heavy pan caramelize the other 6 T. sugar; do not burn. Pour into an 8-inch cake pan. Add creamed mixture. Steam* in oven or on top of stove for about 30 minutes until set. Cool and refrigerate. Invert when ready to serve so caramelized syrup is on top. Small portions are enough.
* Stove top: Fill a sauce pan with hot water, place the pan of flan on top, cover it with a lid and steam it. Oven: Put flan pan into a wide baking dish and pour in boiling water to come halfway up the flan pan. Bake at 300º for 30 minutes or until set.
