1 whole bone in turkey roast 6-1/2 to 7 lb
1 T minsed garlic (3 cloves)
2 tsp dry mustard
1 T chopped fresh rosemary leaves
1 T chopped fresh sage leaves
1 tsp chopped fresh thyme leaves
2 tsp kosher salt
1 tsp freshly ground black pepper
2 T olive oil
2 T freshly squeezed lemon juice
1 cup dry white white

Preheat ove to 325º Place turkey breast, skin side up on a rack in roasting pan

In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice making paste. Loosen the skin from the turkey and gently with fingers smear half of the paste directly on the poultry. Spread the remaining evenly on the skin. Pour the wine into the bottom of the roasting pan.

Roast the turkey to 1-3/4 to 2 hours until the skin is golden brown. If skin overly browns place foil over the breast. Spoon pan juices over the turkey if desired.
