4 egg whites
1 cup sugar
¼ tsp. cream of tartar
4 egg yolks
1/3 cup sugar
¼ cup fresh lemon juice
2 tsp. grated lemon zest
1/2 pint whipping cream

Directions:
Directions:
Butter a 10” pie pan – glass is preferable.
Whip eggs until frothy. Add sugar and cream of tartar. Beat until stiff peaks form.
Spread meringue in pie pan.
Bake 1 hour 300⁰
Beat egg yolks – add sugar, lemon juice and zest.
Cook until thick like pudding. Stir constantly as the mixture scorches fast.
Cool completely.
Whip ½ pint whipping cream.
Fold cooled pudding into the whipped cream.
Put on meringue shell.
Chill several hours or overnight.
