3 baked potatoes
3 tsp butter
1 c diced onion
2 tsp flour
4 c chicken stock
2 c water
1/4 c cornstarch
1 1/2 c Idahoan brand dried potato flakes
1 tsp salt
3/4 tsp pepper
1/2 tsp basil
1/8 tsp thyme
1 c half and half

Directions:
Directions:
Melt butter in saucepan and saute onion til light brown.
Add flour and stir to make a roux.
Add chicken stock, water, cornstarch, potato flakes and spices to pot and bring to a boil. Reduce heat and simmer 5 min.
Scoop out bakes potatoes and cut into chunks.
Add baked potato and 1/2 and 1/2 to pan, bring back to a boil, reduce heat and simmer 15 minutes. Top with shredded cheddar cheese, crumbled bacon and green onions after ladling in bowls.

I was a little leary of the instant potato flakes, but the end result does taste just like the baked potato soup at Tony Romas.
