4 cloves garlic
1 1/2 tsp. coarse salt
2 tbsp. olive oil
1 tbsp. black peppercorns
2 lb. pork tenderloin
2 red bell peppers, julienned
1 c. chicken broth
2 lemons

Directions:
Directions:
Flatten pork medallions to 1/4 inch thick. Place in a ziploc with garlic, salt and pepper and 1 tbsp. olive oil. Refrigerate 2-4 hours. Heat remaining oil and add meat. Brown pork 1 minute per side and remove. Place peppers in pan and saute 2-5 minutes. Pour broth into skillet and scrape up brown bits. Return to low and return pork to skillet and cook 10-15 minutes. Slice 1 1/2 lemons in thin rounds. Add to pork with the juice of 1/2 lemon. Serve over mashed potatoes or rice.
