2 cups sugar
2 cups flour
2 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon

Stir all dry ingredients with mixer until combined

1 1/2 cups oil
4 eggs

Beat at medium speed for four minutes

Add 3 cups grated carrots

Beat at medium speed for another four minutes.
Pour into three wax paper lined and PAM sprayed pans.
Bake at 350º F radiant heat, or 300º F convection, until cake tester comes out clean, or cake pulls away from sides of pan.

ICING:

1 stick softened butter
1 8 oz box cream cheese (softened)
5 cups powdered sugar
1 tbsp. vanilla

Mix with mixer on medium speed until creamy. Sprinkle top and sides with chopped walnuts.
