Medium (creamed or scalloped dishes, gravy)
1 1/2 tablespoons butter
2 tablespoon flour
1 cup milk
1 1/2 teaspoon salt

Thick (soufflé)
2 tablespoon butter
3 tablespoon flour
1 cup milk
1 teaspoon salt

Thickest (croquettes)
2 1/2 tablespoons butter
4 tablespoon flour
1 cup milk
1 teaspoon salt

Directions:
Directions:
Melt butter on medium low, whisk in flour and cook about 2 minutes, stirring so it doesn't scorch. Slowly whisk in milk and let cook to thicken, about 5-7 minutes. Add salt and/or season to taste.
