2 c oat bran
1/4 c packed brown sugar
2 tsp baking powder
1/2 tsp salt
1 c milk
1 egg
1/4 c honey, molasses, or pure maple syrup
Pinch cardamom: Optional
---Variations---
add 1/2 c blueberries, or 1 mashed banana
add 1 c pumpkin
add snipped cranberries, 1 Tbsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cardamom

Preheat oven to 425º. Line 12 muffin cups with cupcake paper liners or oil bottoms only. Combine dry ingredients, mix well. Add combined milk, eggs, honey and oil, mix just until dry ingredients are moistened. Fill muffin cups 3/4 full, bake 15 to 17 minutes or until golden brown.

These are dense healthy muffins. Nancy and I love them but the kids prefer the lighter recipes.
