2 eggs, beaten
2 cups sugar
1 tsp vanilla
1/2 c oil
2 c sifted flour
2 tsp soda
2 tsp cinnamon
3/4 tsp salt
1 c chopped nuts (I use walnuts)
4 c finely chopped apples (I prefer tart like Granny Smith)
lemon cheese icing
1 3-oz pkg cream cheese, softened to room temperature
2 T half and half
1/2 c unsalted butter, softened
4 c sifted confectioners' sugar
1 T lemon juice
2 tsp grated lemon peel
1 tsp vanilla
dash salt

Cake: Chop apples and nuts. Set aside. Grease and flour a 11x7 (or 13x9) in baking pan. Beat together eggs, sugar and vanilla. Beat in oil until smooth. Sift together flour, soda, cinnamon and salt. Stir dry ingredients into egg mixture. Add nuts and apples and mix well. Turn into pan and bake at 300º for one hour or until toothpick comes out clean. This cake is moist. Icing: Beat all ingredients until fluffy. You can add yellow food coloring. To decorate cake, dip thin slices of apple into lemon juice and arrange on the top.

My family likes this best with no frosting. But the frosting is fantastic. This cake also freezes well. I freeze it in individual squares so I can get only as many servings as I need.
