1 frying chicken, cut up
flour, for dredging
1/2 cup vegetable oil or shortening
Salt and pepper, to taste
2 cans refrigerated biscuits

Directions:
Directions:
Heat your oil or shortening until medium hot. Salt and pepper your chicken pieces generously. Also add salt and pepper to your flour and dredge chicken to coat. Fry your chicken until nicely browned. Drain as much of the oil as possible. Cover chicken with water and let simmer until done, approximately 30 minutes. Place refrigerated biscuits on top of chicken and cover until biscuits are light and fluffy. Serve hot.

This is one of my Grandpa Lackey's famous recipes that he made whenever he came to visit. After his sight started failing, he very seldom cooked for himself. I was lucky enough, while living with him and my Aunt Cille in California, to talk him into showing me how to make this luscious dish. Thank you Grandpa for sharing.
