12 cups yellow squash
4 cups white onion
2 red bell peppers
2 green bell peppers

Directions:
Directions:
Shred the above. Place in large bowl. Sprinkle 5 Tablespoons of salt over
the top. DO NOT STIR. Cover and sit out over night. In the morning, place in
a strained & rinse with cold water. Drain well.
Bring to a boil: 2 1/2 cups white vinegar, 1 tsp tumeric & 1 tsp celery
seed, 2 tsp whole pickling spice (tumeric, pickling spice & celery seed need
to be placed in cheesecloth)
After vinegar is boiling, remove cheesecloth & add 5 1/2 cups of sugar and
heat until dissolved. Add squash mixture and bring to a boil.
Put in hot jars with hot seals and hot water bath.
