1 Gallon sized Ziploc freezer bag and some wax paper
1 lb of your favorite sausage
2 Packages of thick cut bacon
3 Scrambled, seasoned eggs
1 Small diced onion
1 Diced pepper (any will work based on your heat preference)
4 Slices of favorite cheese
1Tbs of Maple Syrup

Open the bacon and start on your bacon weave, using the wax paper. It seem complicated, but is pretty simple once you get started. I generally use about 13 pieces for the weave.
Sauté your vegetables and make your eggs, then set aside to cool with your bacon crumbles.
Then place your sausage into the Ziploc back and slowly smooth out until it is smooth and even. Cut 3 sides of the Ziploc to enable you to open the bag.
Lay out your cheese and then evenly place the rest of the ingredients on the sausage.
Now using the Ziploc, slowly roll the sausage into a log. This is never perfect, but they always taste great.
Next, move the filled sausage roll over to the bacon weave; repeat the roll and depending on the amount of fillings the ends may or may not cover up.
You can cook these several different ways; but all methods requires internal temperature to 165 degrees:
Grill: use indirect heat and cook covered, checking often. Approx. 1 hr.
Smoker: 275º approx. 2 hrs.
Oven: 325º approx. 45 minutes. May need broiler to crisp bacon.
