8 med. potatoes
2 onions
6 eggs
1/2 cup oil
4 tbsp flour
Salt and pepper

Preheat oven to 400ºF.

In large bowl mix eggs, oil, flour, salt and pepper. Set aside.
Coarsely grate potatoes and onions by hand. Let sit 3 to 5 minutes and then squeeze out excess liquid. Add grated potatoes and onions to egg and flour mixture. Mix by hand until smooth. Pour into greasesd 13x9 pan.

Bake uncovered 1 hour til golden brown on top. Knife in center comes out clean.
