2 stalks fresh Lemongrass
2 T. vegetable oil
2 cups chopped onions
1 T. peeled and minced fresh ginger
2 - 4 Thai chilies or 2 red Jalapeņo chilies thinly sliced into rings (seeded)
3 cups chicken broth
1/3 cup Sake
4 cups canned unsweetened coconut milk
8 Kaffir lime leaves
3 T. fish sauce
3 T. fresh cilantro leaves plus sprigs for garnish
2 1/2 T. fresh squeezed lime juice
2 tsp. sugar
8 oz. skinless boneless chicken breast halves cut into crosswise thin strips or use chicken tenders
Chopped green onions

Directions:
Discard all but bottom 4 inches of lemongrass stalks. Peel off the tough outer layers. Mince lemongrass. Heat oil in heavy large pot over medium-high heat. Add onions and ginger, cook until onions begin to soften. Add chilies and lemongrass and stir for 1 minute. Add broth, sake and simmer for 5 minutes. Add coconut milk, lime leaves, fish sauce, cilantro leaves, lime juice and sugar. Simmer for 30 minutes. Add chicken and simmer. Divide soup among the bowls. Garnish with the green onions and cilantro sprigs.
