1 pork roast
1/4 c. Olive oil
1 1/2 t. Coarse salt
1 t. Paprika
1t. Fresh ground black pepper
2 to 3 cloves minced garlic
2 T. Fresh rosemary leaves

Baby red and white potatoes
Sweet potatoes, peeled and cubed

Directions:
Directions:
Mix olive oil, salt, paprika,pepper, garlic and rosemary in small bowl. Rub mixture all over pork roast. Place on parchment lined baking sheet. Add potatoes to pan and toss with olive oil and salt and pepper. Roast in 350º oven for about 1 hour or until roast is done and potatoes are crispy. Serve with apple sauce.
