24 medium mushrooms, 1 clove garlic finely chopped, 1/4 c. chopped parsley, 3/4 c. fresh breadcrumbs, salt and pepper to taste, some grated Parmesan cheese.

Directions:
Remove stems from mushrooms after washing. Chop stems. Add breadcrumbs, salt, pepper, parsley, cheese and garlic. Mix well and fill caps with mixture. Place mushroom caps on a lightly oiled baking dish in a single layer. Drizzle oil over mushrooms. Bake in 350º oven for about 15 min. or until mushrooms are tender. If you wish, you can chop up anchovies and add to stuffing mixture but then omit the salt.
