2 cups black lentils (urad daal in Indian groceries or substitute French Puy lentils).
2 medium potatoes, cubed
2 T all-purpose flour
3 T olive oil
4 garlic cloves, minced
2 shallots, chopped
1/4 to 1/2 cup lemon juice (to taste)

Combine the lentils in a saucepan with 2 cups water, bring to a boil and cook for 15 minutes.

Add the potatoes ( and more water as needed) and cook for another 15 minutes until the lentils and potatoes are just tender.

Combine flour and 2-3 T cold water in a small bowl to make a smooth paste. Add to lentils, stirring well to combine and cook for 2 minutes, until the mixture has thickened. Remove from heat.

Heat the oil in a skillet over medium heat. Add the garlic and shallots, cook for one minute, then add to the lentils along with cilantro and lemon juice.

Season well and serve hot or cold.

These lentils are nutty with a chewy texture that is very different from most lentils. I prefer the dish with ore lemon so you may serve with lemon wedges on the side.
